My FAVORITE immunity boosting, anti-inflammatory cozy winter soup recipe

It’s soup season!

We all know it’s soup season, but unfortunately, that also means it's SICK season. When colds start going around, this is my go-to recipe: My FAVORITE immunity boosting, anti-inflammatory cozy winter soup recipe

INGREDIENTS :

1 tablespoon extra virgin olive oil

4cloves of minced garlic

1 yellow onion

2 large carrots

2 celery stalks

1 tablespoon fresh grated ginger

1 teaspoon ground turmeric

6 cups organic chicken bone broth

1 lb boneless skinless chicken breast

1 teaspoon freshly chopped rosemary

½ teaspoon salt

Freshly ground black pepper

1 cup pearl couscous

LETS MAKE IT

First, place a large pot over medium high heat and add in oil. Once oil is hot, add in garlic, onion, carrots and celery; cook for a few minutes until onion becomes translucent.

Next add the ginger and turmeric. Saute for 30 seconds to let the spices cook a bit, then add in chicken broth, chicken breast (make sure it is covered by the broth), rosemary, salt and pepper.

Let the soup come to a boil, and then stir in couscous.

Reduce heat to medium low and simmer uncovered for 20-25 minutes or until chicken is fully cooked.

Once chicken is cooked, remove it to shred it, and then add it back on!

Feel free to add more broth or seasonings to adjust to your own taste and enjoy
